Lauded chef Clayton Wells joins the Merrivale team as mentor

Merrivale is even more merry after announcing the appointment of Clayton Wells to its chef roster.

The appointment of Wells, who helmed Automata and A1 Canteen, comes as Merrivale continues its aggressive expansion plans.

Rumours suggest Merrivale will reboot its Hotel CBD bistro site in Sydney as an eastern Mediterranean restaurant and reopen est. at George Street’s Establishment.

Hotel CBD is famous for hosting top chefs including Jeremy Strode and Luke Mangan and will likely continue the tradition.

CEO Justin Hemmes has said est. will not be a restaurant.

Meanwhile, Wells has jumped into a mentoring role, while working on menu development for the group. However, there is yet no plans for Wells to open a Merrivale restaurant.

“I always respected what Clayton was doing at [the now-closed hatted Chippendale restaurant] Automata and A1 Canteen,” Hemmes told Good Food.

Hemmes will draw on Wells’ experience running a restaurant business. Wells will also continue his role at MOD Dining.
