Halcyon Hotels buys third Sydney pub

Halcyon Hotels has announced it will join forces with Sydney chef Justin North at the Centennial Hotel in Woollahra, following the company's purchase of the venue in recent days.

Halcyon Hotels currently operates the recently renovated Woolwich Pier Hotel, as well as owning the freehold of the Woolloomooloo Bay Hotel, which is tenanted to another operator.

Previously owned by Con Psaltis, the Centennial will be re-opened by Halcyon in late March after an extensive makeover by award-winning design group Luchetti Krelle.

As the executive chef, North’s menu plans stay clear of any fad dining themes and his vision for the new Centennial Hotel restaurant will focus on classic, good value comfort food.

"I have been looking for the right opportunity to really sink my teeth into and the synergy and vision of Halcyon Hotels reflects my own ethos for dining," said North.

Anthony Medich, managing director of Halcyon Hotels said: "With the experience that we have gained from running the Woolwich Pier, we are very much looking forward to working with Justin in reaffirming the Centennial as an institution for locals and Sydneysiders alike."
