A scarcity in healthy eating out options inspires cafe owners to transform menu

DURING a road trip to Dubbo, Windsor cafe owners Amos and Jodie Leighton couldn’t find a healthy bite to eat.

Recently the couple decided to get healthy and follow a clean-eating paleo-inspired diet.

“We thought since we eat paleo and that is good enough for us, it would be good enough for our cafe too,’’ Mrs Leighton said. Since Easter, they have transformed their business, into a paleo cafe and it has had a great response.

“We offer a large range of low carb gluten-free and dairy free meals,’’ said Mr Leighton, who is the chef.

“We only use the best so you only get the best, we source from local growers, as much as possible and use free range chicken and grass fed meats.’’ On hand to help taste the new menu was The Ponds-based Baxter Basics personal trainers Darren Baxter, Jimmy Larson and Akili Muata-Marlow.

To started with a selection of juices, which come in a variety of flavours including the rev up red with strawberries, beetroot, orange and cinnamon. The sides were a good introduction for what was to come and included steam-salted green beans and sweet potato fries with mustard sauce.

For mains we tried the pork and lamb bangers with sweet potato mash; a bun-less grilled chicken and avocado burger; roast beetroot salad and lemon seasoned squid salad.

The trainers said it was a good simple menu full of fresh flavours.

Spears, also features an all day breakfast menu.
