Aria continues its Michelin starred residencies welcoming NY’s Eleven Madison Park

A three-Michelin starred New York restaurant will take up a short residency in Sydney in June as part of Vivid’s inaugural Vivid Food program.

Eleven Madison Park is one of the world’s most revered restaurants and Sydneysiders will be able to taste its wares during a two-week stint. 

Chef and owner, Daniel Humm, along with his US team will work with Aria’s culinary team, including executive chef Matt Moran and head chef Thomas Gorringe, to bring its fine dine experience to a new audience.

However, it won’t come cheap.

Guests can expect two plant-based menus: a nine-course tasting dinner menu for $550 and a shorter lunch option for $395. If you’d like to pair a drink with your food, this will cost extra.

“We could not be more thrilled to participate in Vivid Sydney and bring Eleven Madison Park to the iconic Aria Restaurant,” Humm said in a statement. 

“This year’s [Vivid] theme of ‘naturally’ closely resonates with our core values and journey as a restaurant. We’re excited to delve into New South Wales’ fresh and local ingredients to bring a creative, beautiful and delicious menu to life with Chef Matt and his team. So much of what we eat is part of our identity, and we look forward to sharing our language of food.”

Eleven Madison Park was named best restaurant in the 2017 World’s 50 Best Restaurants awards. 

It was the first vegan restaurant to be awarded three Michelin stars, having gone meat free in 2021.

“The current food system is simply not sustainable, in so many ways,” Humm said of the move which has not been without its controversy.

New York Times food critic Pete Wells said a beetroot served by the restaurant like “Lemon Pledge and smells like a burning joint”. 

The restaurant has also, at times, been accused of mistreating staff. 

Humm will join Rishi Naleendra from Singapore’s two-Michelin-starred Cloudstreet, Cape Town’s Mmabatho Molefe, who was one of the World’s 50 Best Restaurants 50 Next hospitality pioneers in 2022 and Singapore-based Aussie Dave Pynt from Burnt Ends for the festival.

High-profile local chefs including Mitch Orr and Danielle Alvarez will also feature.

Meanwhile, Aria will also host three-Michelin-starred Restaurant Gordon Ramsay in May.

Eleven Madison Park will begin its Aria residency on June 6.
