How to create the perfect plant-based burger

(even if you’re a meat eater yourself) 

The number of vegans and vegetarians continues to grow in Australia. But on top of that is the number of 'flexitarians’ who are choosing to reduce the amount of meat they eat (without eliminating it completely). Research from the University of Adelaide last year shows that almost one in five Australians are making a conscious effort to reduce their consumption of meat for health and environmental reasons. 

 


That means, one in every five of your diners is searching your menu for a vegetarian option. Have you got a perfect plant-based option for them? 


 

Rather than serving up yet another stuffed capsicum, the easiest way to satisfy your veggie-focused diners is with a burger. So, let’s take a look at how to create perfect plant-based burger…

 

Patty 2.0

This is very important to get right. What is the main event of your plant-based burger? Are your customers more likely to want something like a large grilled mushroom? Or would they prefer an impossible burger that imitates meat? Perhaps you should have two options? Have a chat to some of your vegetarian customers and see what they’d prefer.

 

Sauces, sauces, sauces

Every good burger has an incredible sauce. Sometimes, even two. So, think long and hard about what will complement your flavours. Obviously, things like mayonnaise are out of the question, but there are some great vegan alternatives on the market these days, and you can also consider ketchup and sweet chutneys that will elevate your burger’s flavours.

 

It doesn’t have to be healthy

Many venues make the mistake of making all their vegetarian and plant-based food healthy and light. But keep in mind that plant-based eaters want to head out for a decadent meal too, not feel like they’re at home with the same old salad. Don’t be afraid to make it a bit decadent with some fattier ingredients and richer flavours. You’ll have the vegos coming back every ‘cheat day’.
