UNOX SlowTop - the modern static oven

 

Slow cooking meat, dehydrating vegetables, proving dough, holding at 70°C. These are just some of the many possible uses of the SlowTop ovens in the ChefTop™ range.

The XVL595, XVL585 and XVL385 SlowTop ovens are an effective support in the kitchen that when needed can free-up space in the combi ovens.

In fact they can be used as holding cabinets during service with a working temperature of 70°C and the humidity needed to safely hold the food until it will be served.

The automatic humidity control always provides perfect conditions in the cavity so that the food remains impeccable.

During preparation hours the slow cooking ovens can be used for dehydration processes, as provers and for any delicate cooking processes that require low air speeds and temperatures under 180°C.  Thanks to the core probe it is also possible to use the latest addition to the ChefTop™ range for slow cooking, even overnight, for roasted and braised meats.

The SlowTop XVL585 and XV385, with 7 and 5 pans respectively, are managed electronically through the ChefTouch digital control panel of the ChefTop™ oven that they are linked to.

The XVL595 SlowTop however is controlled through its own integrated ChefTouch control panel which means that it can also independently control a SlowTop XVL585 or XVL385 creating a unique slow cooking column.

All SlowTop ovens are equipped with a semi-automatic washing system (included as standard) with Rotor.KLEAN™ technology, which makes the cleaning and care procedures quick and easy.
