RECIPE: Chicken Schnitzel & Roasted Apple Burger with Mustard Fennel Mayo

Ingredients

1 tablespoon olive oil
20g butter
2 green or red apples cored, sliced in rounds
4 Ingham’s Ready to Eat Chicken Breast Schnitzels
4 hamburger buns, split in half
1/4 cup whole-egg mayonnaise
2 tablespoons wholegrain mustard
½ fennel bulb or 2 teaspoons of fennel seed slightly toasted
4 leaves of cos lettuce

Method

  1. Cook apples, in a pan with oil and butter for 30mins. Heat Ingham’s Ready to Eat Chicken Breast Schnitzel as per instructions.
  2. Preheat grill or salamander on high heat. Toast cut sides of buns until light golden. Place bun bases on plates.
  3. In a processor blend mayo, mustard and fennel until fennel is smooth.
  4. Spread buns with mayonnaise. Top with lettuce. Cut schnitzels, if required, and place on lettuce. Top with roasted apple slices. Cover with bun tops. Serve with chips.
