RECIPE: Satay Wrap with Cucumber salad

Ingredients

2 Lebanese cucumbers, thinly sliced into ribbons

2 red radishes, trimmed, very thinly sliced

1/2 cup mint leaves

1/2 cup coriander leaves

1/3 cup sweet chilli sauce

16  Ingham satay kebabs warmed up and stick removed

8 sheets lavash bread or flat bread

 

Equipment

You will need 16 toothpicks

 

Method

  1. Combine the cucumber, radish, mint and coriander and sweet chilli sauce in a medium bowl.
  2. Lay 1 piece lavash bread on a board, and evenly place cucumber salad on bread. Top with   2 satay chicken skewers meat. Roll wrap tightly to encase the filling. (tip you can also put in a sandwich press if you like)
  3. Cut wraps into 4. Secure each small wrap with a toothpick. Serve.
